The exact amount to use varies according to the type of milk or cheese type. The usage rate of Valiren microbial Rennet Powder can be expected to be in the range of 2 to 3 gr. / 100 Lt. milk (26 gal) It is recommended that the measured amount of rennet powder is dissolved in 50 times its own weight of chlorine free potable water, allowing 30 minutes with occasional agitation for complete dissolution. Thereafter follow regular Cheesemaking procedures. Example how to scale down to your batch size: Take 150 ml potable cold water and mix in 3 gr. rennet powder. = For 100 liter milk (26 gal). For 10 liter milk: Out of this use 15 ml "liquid rennet, which is for 10 liter milk (2.6 gal.) or the liquid rennet needed for what your batch size is. Sounds simple?
